Brown Sugar

Sugar is a carbohydrate that occurs naturally in all fruits and vegetables. It is the major product of photosynthesis, the process where plants transform the sun’s energy into food.

The natural sugar stored in the cane stalk or beet root is separated from the rest of the plant material. This is accomplished by pressing the cane to extract the juice; boiling the juice until it thickens and sugar crystals begin to form; spinning the crystals in a centrifuge to remove the syrup (producing raw sugar); refining the sugar by washing and filtering to remove non-sugar ingredients and color.

Brown sugar is white sugar that has been combined with molasses, which gives a soft texture. Light and dark are the two most common types of brown sugar. In general, light brown sugar is believed to have the more delicate flavor.
